INGREDIENTS

  • 1 sheet puff pastry
  • 1 kg beef fillet
  • 2 tbs Dijon mustard
  • 2 tortillas
  • 2 egg yolks
  • 8 slices bacon
  • Butter
  • 1 clove garlic
  • 10 white mushrooms
  • Thyme
  • 1 kg baby potatoes
  • Salt & pepper

DIRECTIONS

  1. In a deep frying pan, put a little butter, the thyme and garlic and sear the beef until sealed on all sides.
  2. Place the meat on a plate, pour any leftover sauce over it, brush with mustard and add salt and pepper. Finely chop the mushrooms and sauté in a little butter until they release all of their liquid.
  3. Spread a piece of plastic wrap over the countertop. Cut the tortillas to the size of the fillets and lay them out on the cling film. Place the bacon slices and the mushrooms on top. Place the fillets in the centre, take up the corners of the plastic wrap and carefully roll together, pressing in the sides until it resembles a piece of wrapped candy.
  4. Allow the meat to rest in the refrigerator for a while.
  5. Spread a new piece of plastic wrap over the countertop and put the short crust pastry sheet on it. Take the fillets, unwrap them and place them in the centre of the pastry.
  6. Beat the egg yolks with a little water and brush the pastry. Carefully wrap like a piece of candy and refrigerate for 30 mins to allow the roll to form.
  7. Remove from the refrigerator, remove the cling film and brush with the egg mixture. Place the meat and potatoes in a roasting pan and cook for 25-30 mins at 180°C.
  8. Transfer the meat to a platter and continue roasting the potatoes for another 40-50 mins.
